Two essentials for weekly Winter food prep!
Food prep is pretty much an essential part of enabling us to eat well! The thought can seem overwhelming, but it’ll save you so much time in the long run and once it becomes part of your weekly routine you’ll forget why you put off doing it up until now.
Throughout Autumn/ Winter I find myself making weekly soup/stew and a different salad which I can pair with protein and carbs (depending on what salad is) to make a really quick easy meal throughout the week.
Here’s my go to soup base and slaw recipes:
Soup Base
1x onion finely diced
1-2 cloves garlic
2 sticks celery
1 tsp stock or stock cube/ bouillon for veggie I like 9 Meals of Anarchy or non veggie homemade bone broth or Ossa Organic
Either:
base veg - think root veg, peas, aubergine etc
or tin tomatoes
or lentils
Water
Spices/herbs of choice!
Sautee the onions, garlic and celery with a small amount of coconut oil butter until soft and translucent, pop the lid on your pan to speed up the process
Add your base veg or lentils and stock, cover with water, bring to the boil until veg if soft
Add in your additional flavours to make your soup sing!
Either blend (you may need to add in extra water to get your desired consistency) if you want a smooth soup or leave chunky if that’s what you prefer
Flavours for my soup this week was a curried sweet potato with some chopped spring greens for a bit of texture. I used some turmeric, cumin, coriander and ginger, as well as coconut to thin at the end instead of extra water.
Basic Slaw Recipe
Half a red cabbage
2 carrots
2 spring onions
generous sprinkle of pumpkin seeds or seed nut of choice
Approx 2 tbsp Mayo - I like Hunter and Gather for seed oil free (they do with/without egg options)
Approx 1 tbspExtra virgin olive oil
Approx 1 tbsp Apple cider vinegar
Optional chilli flakes
Salt and pepper
Finely slice cabbage and spring onions
Grate carrot
Mix together and add pumpkin seeds
Mix liquids and massage through, until everything is well coated
Season to taste
So many options here to introduce different veg and flavours!
